5 Soup Recipes to Try this Fall

New Jersey’s weather hosts frosty mornings, dark rain storms, and chilly afternoons, making me reach for recipes that are hearty and warm.

Soups are one of my favorite recipes to make in the fall. For this week’s blog, I’ve compiled 5 of my recipes which you should try during this chilly, autumn season. If you’ve made them before, comment below with your favorite!

5. Easy Pumpkin Soup

If you love pumpkin and are looking for a versatile soup, this recipe is for you. You can use more or less broth to create your preferred texture. I like serving this easy pumpkin soup with a herbed crostini for dipping. I used savory flavors in my recipe, but if you prefer a sweeter soup, I’ve included notes to adjust your measurements to achieve this.

4. Autumn Vegetable Rice Soup

This autumn vegetable rice soup is a great way to use leftover veggies and have a hearty soup. It includes kale, sweet potatoes, mushroom, rice, and more! It is creamy and the old bay seasoning adds a nice twist to the flavor. 

3. Leftover Ham Bone Soup

This is a recipe I learned from my grandmother. She taught me to use the leftover ham bone from the holidays to make a tasty ham soup with veggies and homemade broth. It’s a great recipe to reuse ham bones (fresh or frozen), and homegrown herbs and veggies.

2. Tortellini Escarole Soup

Tortellini escarole soup is my dad’s favorite. This is my dad’s go-to soup to order when we go out to eat. I decided to make an easy homemade version which uses delicious tortellini from Costco! You can be ambitious and make your own homemade tortellini, but these pre-made ones are a great shortcut.

This is one of my favorite soup recipes. Julia Child is a legend and her recipe for how to make French onion soup is to die for. I highly recommend you make this recipe; it’s perfect for the chilly fall weather.
